Ingredients
- 4 each whole wheat pita bread
- tablespoon canola or olive oil
- 1 cup hummus (choice of flavor)
- 20 each cherry or grape tomatoes halved
- 12 each black or green olives sliced
- 1 cup feta cheese crumbled
- 1 teaspoon salt
- 1 teaspoon dill
- 1 teaspoon chopped parsley
Directions
- Toss red onions, olives, spices and feta cheese with red vinegar and set aside.
- Turn on skillet to medium heat, brush with canola oil. Place pita on
pan 15 seconds on each side until soft.
- Reduce heat, place remaining ingredients on pita, top with cheese
and cover until cheese is melted.
