Bran muffins are a delicious source of fiber, healthy and taste great! You may add other dried fruit, such as dates, in addition to the raisins if you wish.

Ingredients
- ¾ cup all-purpose flour
- ½ cup whole wheat flour
- ¼ teaspoon salt
- ½ teaspoon baking soda
- ½ cup sugar
- 1 ¾ cup bran flake cereal with raisins
- 1 egg
- 1 cup buttermilk or 1 cup milk with 1 tablespoon vinegar
- 2 tablespoons vegetable oil
Directions
- Preheat oven to 425 degrees. Spray bottoms of muffin tins.
- Put flour in large bowl, add salt, baking soda and sugar.
- Stir in bran cereal, mix well.
- Make well in center, set aside. In another bowl mix egg, buttermilk, and oil.
- Pour egg mixture in well of flour mixture, stir till moist. Do not overmix.
- Fill tins 2/3 full, bake for 15-20 minutes or until golden brown.
