Ingredients
- 2 pounds roma or beefsteak tomatoes, halved and cored
- ½ pound cucumber, seeded and peeled
- 16 ounces vegetable juice or tomato
- 1 medium green bell pepper, cored
- 2 small garlic cloves, peeled
- ¼ cup diced red onion
- 1 tablespoon lemon juice
- ¼ teaspoon table salt
- ¼ teaspoon black pepper
- 1 teaspoon basil, dry or fresh
- ¼ teaspoon tabasco hot sauce
- 1 slice of white bread, crust removed
Directions
- Combine all ingredients together in a blender or food processor. Puree for one minute or until soup reaches desired consistency.
- Taste and season with spices, refrigerate in sealed container for 3-4 hours.
