• 2 eggs
  • 2 tablespoons milk
  • Pinch of salt/pepper
  • 3 tablespoons shredded monterey jack cheese
  • Handful of tortilla chips, crushed
  • 1/2 cup chopped or torn fresh spinach
  • 3 tablespoons salsa
  • Sour cream, chopped green onion and fresh cilantro, to taste

Directions: In a microwave-safe mug, beat the eggs and milk together with a fork. Season the egg with salt and pepper. Sprinkle the cheese over the egg mixture, and stir to combine. Stir in the crumbled tortilla chips, spinach and salsa. Microwave the mug on high for about 2 minutes, or until cooked through. Garnish with sour cream, green onion, and fresh cilantro.
