• 1/2 cup rice
  • 1 cup water
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 strips bacon, chopped (optional)
  • 1/2 cup peas, chopped fresh carrots and/or greens (spinach, kale, chard)
  • 2 eggs
  • Salt and fresh scallions, to taste

Directions: In a bowl, combine rice, water, soy sauce, sesame oil and bacon. Stir, then microwave covered for 6-8 minutes until the rice is fully cooked (longer for brown rice). Mix the veggies into the rice. In a separate bowl, beat the eggs with the salt. Microwave the eggs for 1-2 minutes, until the eggs are fully cooked. Break up the egg into small pieces and mix with the rice. Garnish with scallions. Credit:
