Refrigerated Apple Butter
Apple butter is great spread on toast, stirred in oatmeal, or served with lean proteins like pork loin. Homemade apple butter also makes great seasonal gifts to family and friends.

Ingredients
- 2 tablespoons unflavored gelatin powder
- 1 quart bottle unsweetened apple juice
- 2 tablespoons lemon juice
- 2 tablespoons liquid low-calorie sweetener
- food coloring (optional)
Directions
- In a saucepan, soften the gelatin in the apple and lemon juices.
- Bring the liquid to a full rolling boil and boil for 2 minutes to dissolve the gelatin.
- Remove from heat.
- Stir in sweetener and food coloring (if using).
- Fill jars, leaving 1/4-inch headspace.
- Adjust lids. Do not process or freeze

Store in the refrigerator and use within 4 weeks.
