Moe, J. 2022, Massaged Kale Salad - Quick Healthy Meals with Limited Kitchen Access, Desert Farming Initiative, University of Nevada, Reno

Ingredients:

  • 1 bunch kale
  • 1/4 cup pumpkin seeds
  • 2 carrots, shredded
  • Juice from 1/2 lemon
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon tamari or soy sauce
  • Salt and pepper, to taste
  • 1/4 cup grated parmesan (optional)

Directions: Remove stems from kale and chop. In a small bowl, whisk together olive oil, tamari, pepper and honey. In a large bowl, combine the kale with lemon juice and salt - massage the kale for 3 minutes or until the kale softens. Add olive oil mixture, carrots and pumpkin seeds to the kale and toss. Serve chilled. Add parmesan if desired.  Share with your friends!
