Bran muffins are a delicious source of fiber, healthy and taste great! You may add other dried fruit, such as dates, in addition to the raisins if you wish.

Ingredients

¾ cup all-purpose flour
½ cup whole wheat flour
¼ teaspoon salt
½ teaspoon baking soda
½ cup sugar
1 ¾ cup bran flake cereal with raisins
1 egg
1 cup buttermilk or 1 cup milk with 1 tablespoon vinegar
2 tablespoons vegetable oil

Directions

Preheat oven to 425 degrees. Spray bottoms of muﬃn tins.
Put flour in large bowl, add salt, baking soda and sugar.
Stir in bran cereal, mix well.
Make well in center, set aside. In another bowl mix egg, buttermilk, and oil.
Pour egg mixture in well of flour mixture, stir till moist. Do not overmix.
Fill tins 2/3 full, bake for 15-20 minutes or until golden brown.
