Ingredients

  • 2 eggs
  • ½ cup diced tomatoes (fresh or canned)
  • ½ bell pepper, chopped
  • 1 garlic clove, minced
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Fresh parsley or cilantro, chopped
  • Salt and pepper to taste

Directions

  1.  Sauté the onions and garlic in olive oil until soft.
  2.  Add the bell pepper, cumin, and paprika, cooking for a few minutes.
  3.  Stir in the tomatoes and let simmer for 10 minutes.
  4.  Make small wells in the sauce and crack the eggs into them.
  5.  Cover and cook until the eggs are set to your liking.
  6.  Garnish with fresh herbs and serve with whole grain bread.
