Bacteriophage solutions are commonly used in the meat industry to reduce the risk of microbial contamination during processing. In this chapter, we describe methods to validate the effects of bacteriophage applications on reducing E. coli and Salmonella counts in intact and ground fresh meat. The methods encompass all phases, including proper strain selection, inoculum preparation, inoculation, bacteriophage application, bacteria recovery, and enumeration.
